The 2020's just might go down as the most difficult time period ever for the foodservice industry.&nbsp;&nbsp;The worst of the pandemic woes may have passed, but a trio of new challenges are shifting how the industry operates. Labor shortages, supply chain disruption and inflation have forced foodservice leaders to make tough choices affecting employment, food quality and pricing.&nbsp;

Others facing product shortages have begun to rely on alternate sources. Fresh items have been replaced by lower-quality, convenient shelf-stable and frozen substitutions. Some operators report that they’ve begun shopping at club stores, relying on dual sourcing and exploring other alternative buying channels.&nbsp;To combat labor shortages and attract new employees, owners and operators are reviewing their benefits and working conditions with fresh eyes. While some can offer higher wages and better benefits, others are turning to technologies like pay-by-QR-code or inventory management software to make up for gaps in labor.&nbsp;

The New Reality of the Foodservice Industry

As a bartender, I have a glassware addiction. I’m always getting more sets, long after the shelves are full.&nbsp;&nbsp;I love all the different shapes and sizes and find that as frequently as I’m thinking about how the flavors will balance when I’m crafting cocktails, I’m also pondering the presentation.&nbsp;&nbsp;I love when the reality of a beverage matches the way I imagined it, and every detail, from garnish to first aroma to glassware gets considered when attempting to reach that goal.&nbsp;Libbey has an over 200-year history in glassware, and they’re still adding new designs. One of the newest is the Structure series.&nbsp;&nbsp;I was able to get my hands on a few to try them out. They are available in three different sizes: 9-ounce rocks glass, 12-ounce double old fashioned and 12-ounce cooler. At first glance, these drinking vessels are visually unique because they’re square and feature a twist. The twist in the design provides a more elevated and elegant look than plain glass.&nbsp;&nbsp;

Immediately, one of my favorite things about these glasses is that they’re sturdy. Believe me, there are times when I love a thin cocktail glass, but being fine and being fragile are two different things.&nbsp;&nbsp;Managing a bar program, one of my main thoughts every time I’m considering which glassware to purchase is whether it’s going to survive heavy everyday use, being handled by those who are inebriated, and being washed/sanitized at high temperatures.&nbsp;&nbsp;

A common issue I’ve run into over the years is loving a style of glass and being unable to find it again to order more for the restaurant, or purchasing a case and realizing they are a different size than the originals. <h2>Create community, connection with family-style dining&nbsp;</h2>

Think back to the most memorable meals of your childhood. They’re probably ones where you were surrounded by family and friends, enjoying dishes made with care and love.&nbsp;Family-style dining seeks to replicate that warm, comforting feeling of special shared meals with food served up on large platters meant for passing between diners. And in an age where we are so often missing community and connection, it’s no wonder that this style of service is a growing trend in restaurants and banquet settings.&nbsp;&nbsp;Chef Adrian Lipscombe is a fan of creating family-style dining experiences, especially to bring an intimate feel to large gatherings. “I even served family style at my own wedding,” she says. “We made the decision to do family-style because family and friends that had never met were coming from all around the world, and eating together as a family was important to us.”&nbsp;The arrangement, she says, fosters an atmosphere that is calm and inviting, allowing the food to become “the icebreaker and commonality” among guests.&nbsp;

For restaurants and buffets, family-style dining also has its advantages, from streamlining a menu and improving food costs to reducing staffing needs and creating the efficient delivery of dishes from appetizer to dessert, Adrian says. Because you’re not taking each individual guest’s order, you’ve also eliminated potential errors between front of house and the kitchen.&nbsp;Successful family-style dining starts with thorough training. Make sure your staff knows the menu well and can also clearly explain the family-style concept and ordering process.&nbsp;“One thing I express to staff when providing family-style service is to imagine this is your family for Thanksgiving and you are the host,” Adrian says. “You want to make sure everything is going according to plan. Notice the rhythm that each table is going at. Not all tables will finish at the same time, and you need to know when to be a gracious host and recognize when to give a little bit more time.”&nbsp;Dishes should be thoughtfully plated so that every guest can try a little of each ingredient. Consider offering a variety of sizes – i.e. for two, four or six – so guests can customize their selections. And, Adrian adds, be cautious of when to clear plates. “Family-style service can be a little messier and you may need to provide more hands-on approach to clearing and exchanging dishes and silverware among guests,” she says.&nbsp;&nbsp;&nbsp;

“I love family-style service for many reasons, but I especially like it because everyone, from the service team to the guests, young and old, are involved in making the whole event experience amazing,” Adrian says.&nbsp;&nbsp;Ultimately, “I hope the guest walks away from a family style service feeling they were a guest at my dining room table. Family-style service is more than just about food, it is about the experience of creating a strong bond with people.”&nbsp;Chef Adrian Lipscombe is the founder of the 40 Acres Project, which seeks to preserve the legacy of Black agriculture and foodways through the purchase of Black-owned land. <h2>For Chef Marc Quiñones, food is a lifelong passion.</h2>

His love for food started before he could see over the stovetop.&nbsp;&nbsp;Some of Marc's earliest memories are of following his mother around their South Bronx kitchen as she whipped up dishes filled with flavors inspired by their Puerto Rican-Dominican family.&nbsp;&nbsp;Those experiences led him to pursue a career as a chef, and he has developed his passion at restaurants around the U.S. and in stints on the Food Network and “Hell’s Kitchen.”&nbsp;Today, Marc is executive chef at MÁS Tapas y Vino at the Hotel Andaluz in Albuquerque, New Mexico, where he reinterprets Spanish classics with his own signature flair.&nbsp;&nbsp;As we wrap up Hispanic Heritage Month, we caught up with Marc to talk about his background, his craft, and how he brings the two together to create amazing culinary experiences.&nbsp;How has your heritage inspired your culinary style and journey?&nbsp;"Growing up as a Puerto Rican-Dominican in the South Bronx, finding culinary inspiration was not too hard to find. One word: Wellness. Concerns about healthier living have many Americans cutting calories and drinking in moderation. <h2>Buffet trends for a post-pandemic world&nbsp;</h2>

This time two years ago, “buffet” was practically a dirty word for diners.&nbsp;Mingling with strangers in long lines, leaning over chafing dishes and sharing serving utensils (and possibly germs) with others? Returning to a pre-Covid business model seemed almost unthinkable.&nbsp;Now, as life has settled into a “new” normal post-pandemic, buffets and events have roared back to life once again. And though many Covid-era precautions are long gone, other adaptations remain, balancing sanitation and innovation to give guests safe, engaging and delicious experiences:&nbsp;Safety first&nbsp;&nbsp;Food safety was a top priority for the foodservice industry even before 2020, but the pandemic put it at the forefront of diners’ minds and guests are still looking at restaurants and events venues with a critical eye.&nbsp;Simple changes like spacing stations around a room and doing more frequent cleanup give diners the sense of safety they crave. Server masking, plastic dividers and social distancing may also be appropriate, depending on the setting and the comfort level of guests.&nbsp;&nbsp;Creative plating&nbsp;During the pandemic, many buffets swapped large serving bowls and sprawling trays for individual portions. Along with eliminating excess touchpoints for guests, the pivot to small plates has inspired chefs’ creativity as they compose dishes in a miniature format.&nbsp;Some of the more ingenious creations involve mini cast iron pans, tiny glass cloches and single-serving charcuterie boards. Small plates also give venues the ability to control portion sizes to save on food costs and eliminate waste.&nbsp;

<h2>Rocks or double old fashioned: Which glass should you choose?&nbsp;</h2>

Both the rocks glass and double old fashioned, or “DOF,” are standard issue behind any well-stocked bar, and together they’ll cover just about any spirit or cocktail on your menu. But do you know the difference between the two – and when you should use them? Read on to find out:&nbsp;The rocks glass&nbsp;The rocks glass is also known as an old fashioned, named for the OG cocktail of the same name. Sometimes called a lowball, this short, sturdy glass clocks in at around 6 to 10 ounces, with a wide mouth and thick, balanced base ideal for muddling.&nbsp;&nbsp;Traditionally, an old fashioned was always served in cut glass, though today’s rocks glasses come in an endless variety of designs.&nbsp;&nbsp;Rocks glasses are preferable (naturally) for on-the-rocks cocktails built directly in the glass, as well as straight spirits and neat drinks.
